Jay C. Mickelson purchased the Snak Shak Cafe in 1962. Jay had previously been a salesman for the HJ Heinz Company. Within two years the growth had exceeded the facility and plans for a new building were under way. This new building completed in 1964 became the home for Mickelson's Restaurant for the next 30 years. The new building brought great success and sales increased above expectations. Mickelson's became a regular stop for many Utahn's.

In 1976 due to health reasons, Jay sold the restaurant to the head chef Norm Greenhalgh. Norm ran the restaurant until April of 1985. The bypassing of the freeway around Nephi in the fall of 84 was a devastation to the business. Sales dropped by 40 plus %. Norm put the restaurant up for sale.

In the spring of 85 the restaurant was again bought by the Mickelson family. The spring and summer brought much better than anticipated sales. Remodeling, clean up, and getting things in ship shape was much to attribute to the renewed success.

During the late 80's the decision was made to move the restaurant to the Interchange. Over 5 years were spent on the planning, analyzing, and stucturzing of finance for the new restaurant. An emphasis was spent on time & motion efficiency, energy efficiency, information control, state of the art equipment, & architectural ethectics.

Construction began Mid July 94. After nearly one year of construction the new building was complete. Our first meal at our new location was served May 30th 1995.

Our success since that first day in May has been fantastic. We have been accepted by locals and travelers at a greater level than we had possible dreamed could happen.
